In the selection of Casa Noguera’s raw meats you will find the best raw botifarra, without any heat treatment, that is why it is raw. We purchase the animals from local suppliers and of certified quality. We separate the meat from the bone manually to ensure that only the best parts of the pork are used for the product. We mince the meat and we stuff it into a natural pig’s tripe, we tie it by hand, one by one, with a cotton string and we then have our raw botifarra: An ideal meat to cook on the grill and accompany with white beans, grilled vegetables or baked potatoes. And if you want to dress the traditional dish, accompany the raw botifarra with a good “alioli” which will delight everyone who tries it.
